40 DAYS FASTING BEFORE CHRISTMAS DECEMBER 19, 2014

Wow! My 40 days fasting from meat, eggs, dairy products ( including cheese ) before Christmas will soon come to an end on December 24th. I could not believe I have lasted this long without meat, eggs and dairy products. It was not too hard fasting from meat but not with cheese and milk. Almond milk cannot replace the real milk, as far as I am concern. I found out too that I can resist the temptation. Why do I say that? One time, I woke up with the smell of bacon, and when I saw the plate of bacon, I took the plate...just brought the plate of bacon close to my nose, sniffed it ( like a dog! Ha! Ha! Ha!), and put it down without even touching it! I did really good!

Hummus, pita bread, garlic sauce, almond milk, pasta,and margarine  have been my best friend for the last 19 days! I even learned how to make a cake with no eggs, and it turned really, really good! I learned what to substitute the eggs with and I was really susprised how yummy the cake was. Can you believe I made it twice already, but the cake was different from the first time since I tried a different formula for the egg substitute the second time. Nevertheless, it was still delicious!!!

Did I lose some weight on my journey? Not really, since I was able to find junk food that conforms to the fasting. Did you know that? And besides, I have been eating a lot of carbohydrates, bread, pasta, rice and  potatoes.

I was able to eat and taste vegetables that I did not know exist, like kale and Swiss chard. Did you know that you can make kale chips. I did not know that until my journey.

What a journey this is! Will I do it again? Maybe, and maybe the second time around, I can eat better and not just carbohydrates!

JUST PLAIN TALK March 19, 2014

Just came back from Kroger today...prices on some items have gone up...do you think it's because the value of the dollar has gone down? Maybe. I just read today that China started to trade with another country in yuan, not in dollars. Shredded cheese, Kroger brand on sale is now $2.59 for an 8 oz package; cost of spam went up also to $2.69. Who cares about spam? I do, it's easy to fix & eat. Don't they serve that in restaurants in Hawaii? Yes, they do.  But there are certainly good buys in Kroger today, e.g., beef ( chuck pot roast) is buy one get one free. This is really a great price!; Keurig caribou kcup ( 12 ) is $6.99 ( previously $8.99), a very good buy; some green mountain kcup is also on sale at $6.99, a really good price. Hilshire polska kielbasa is 2 for $4.00. There might be other items on sale that I did not see since I was in a hurry. Sale ends on Sunday 3/22.
Other stop was an Asian store, double dragon rice 20 lbs was $19.99 which was $12.99 before; kyongi rice 40 lbs was $24.99 which was $19.99 before. I do not know if I am the only one that is griping about prices...packages of items are getting smaller & prices are going up. One can easily spend $ 50 nowadays with only one or two items! Yikes!!! What can we do? Anyone?? 
Another thing that has gone up is medicine, I did not have a copay before Obamacare on generic but now, AFTER OBAMACARE,  it is $19.25 for a 90 day supply! Premiums also has doubled and the benefits are not that great..high copay, etc...Isn't that ironic...the affordable care is not affordable....why do the politicians call it affordable, perhaps they do not know what the word " affordable" means? For them, it might be affordable since they are millionaires but for ordinary folks like me, it is outrageous and insane!! So, what will people do...buy food or buy medicine? Goodness gracious!!! I hope and pray that Obamacare will be repealed!!! 
What is going on?

....High unemployment
....US dollars devalued
....Crazy weather all over
I can enumerate other things but I think I might run out of space, so I will stop now. I just hope and pray that things will get better...am I being overly optimistic? Probably...you guys tell me...I think I am done for now....

Rice or Potato

Which do you prefer, rice or potato??? It does not matter to me. I like them both!!! Which one can be used more in other dishes??? I think they are both versatile!!! Are you sure??? Any comments, anyone???

What is rice? It is a grain that is the most important staple food for a large part of the world's population, the East, Southeast Asia, South, Middle East, Latin America and West Indies. There are many varieties of rice, namely, long grain, medium, wild rice and brown rice. Rice is easily cooked, either boiled or steamed. There are also a wide variety of rice cooker that are very easy to use! Just put the desired amount of rice and water on the pot, turn it on, and presto! you have rice cooked to perfection!!!!

What is parboiled rice? Just what the name implies... "par"-tially "boiled." Parboiled rice is easier to process and most packaged rice is parboiled rice!!! This can easily be made into rice pilaf. Yum, yum!!! That sounds good!!! Rice can also be made into a variety of dishes with seafood, chicken and anything you want to add to it!!! Like fried rice??? You bet!!! It can also be made into desserts like rice pudding.

How about potato?? Potato is a starchy, tuberous crop that grows underground. It can be made into several dishes, the most popular is the french fries that you see in restaurants!!! It is also made into mashed potatoes, baked potato, potato salad and as garnish to chicken, beef, or pork!!! There are endless uses of potatoes, that I am sure everyone knows!!!!

How about storage??? Potatoes do not keep very well, it is vulnerable to molds that feed on the stored tubers, quickly turning them rotten. That is why I stopped buying potatoes that are already pre-packaged, especially the ones that you cannot see inside the package!!! As soon as you open the bag, there are many rotten potatoes!!!! You think it is a bargain??? No, it is not, because of the rotten ones inside!!!!

How about rice??? The grain can be stored for several years without much risk of rotting!!! When you open a bag of rice, do you see any grain rotting??? Of course not, that is the beauty of rice!!! Do I see partiality with rice??? Ha! Ha! Ha! No, I like potatoes, be it mashed with gravy, Yummy!!!! or baked with lots of toppings like butter, sour cream, bacon, cheese, broccoli!!!! Enough!!! You are making me sooo hungry!!!! Yikes!!!! Hearing all those toppings made me gain 10 pounds!!!! Oh, ya??? Should I go on??? No!!!!

Okay, guys and gals, which one will it be???? Rice or potato????? Come on, let us eat!!!!
